What is bloom and does it hurt the chocolate?

Bloom is that white frosted look that chocolate sometimes gets in storage. It is bits of cocoa butter on the surface of the chocolate that is often caused by temperature fluctuations in storage or transit. For baking purposes, the chocolate is unaffected.

Tools for chocolate and candy baking.

  • Fun 'n' Fancy Mold Pan. Chocolate Chips and Wafers for Baking.

We carry a complete selection of baking chips and wafers.  Most of these are imported and all are as good or better as you will find in the stores.  We carry all your favorite chips plus some hard to find chips like Mint Chocolate Chips, Rainbow Chips, and Chocolate Cookie Chunks.

Cocoa for Baking

We carry the very best imported cocoa at prices far less than you would expect to pay at a gourmet source.  We package our own and pass the savings on to you.  Where most cocoa powder in the store is 8 to 10% cocoa butter, we have cocoa with as high as 24%.  You will find medium dark  cocoa from France and dark, rich cocoa from Holland.
