What’s an aebleskiver?

Danish aebleskiver (sometimes called “ebleskiver”) are one of the few pastries that you can make on the stovetop—that doesn’t require baking—and that you don’t have to fry. They are made with a simple batter, are often filled, and usually dusted with sugar. They are easy to make and the varieties are endless.

An aebleskiver pan makes it easy. Spoon the batter into the cavities in the pan and turn them with a toothpick or skewer. We’ll tell you how below.

How to Make aebleskiver

A holiday in Denmark often begins with a breakfast of these puffy little pastries called aebleskiver. Traditionally, they are made with an apple filling or served with applesauce (hence their name). An aebleskiver Pan Makes it Easy!

aebleskiver pans come in two varieties—cast iron and cast aluminum.  In order to cook properly, an aebleskiver pan must be heavy to hold heat.  Nothing holds the heat better than cast iron.  The disadvantage to cast iron is that it has to be seasoned and kept dry to keep from rusting. 

Our cast aluminum aebleskiver pans are still heavy enough to hold heat and cook properly but are easier to care for than cast iron pans.  These are attractive pans with a tough, nonstick surface to make cooking your aebleskivers easy.

We think you’ll be happy with either type of pan.  The dedicated cook might appreciate the cooking qualities of the cast iron pan while the hurried, more casual cook might appreciate the carefree qualities and attractive good looks of an aluminum pan.

What do I fill my aebleskivers with?

Almost anything.  Fill your aebleskivers with jam or jelly, whipped cream, pastry, cream, applesauce, and much more.  Some people fill their aebleskivers with savoring fillings like bacon and cheese or pepperoni, cheese, and marinara.

What is the quickest, easiest way to make aebleskiver?

The quickest, easiest way to make aebleskivers is with a pancake mix. Just make an adjustment to the eggs.  Instead of adding an egg as called for in the directions, whip three egg whites and fold them into the batter. Fill them with whatever you choose and dust them with powdered sugar.

Yes, any pancake recipe will do—just substitute three whipped egg whites for the whole egg.  Whip the eggs to soft peaks and fold them in.

Filled aebleskivers

Traditionally, aebleskivers are made with a spoonful of jam in the center: spoon a tablespoon of batter into the well, place a teaspoon of jam on top, then add another spoon of batter.  It’s simple and effective.  But with a decorating set or pastry bag, you can fill your aebleskivers with pastry creams and whipped fillings.

Here’s how to fill your pastries with a decorating set:

Make the aebleskivers as directed. Then using the long tube fitting on your nine-piece decorating set, insert it to the center of the pastries, and press the plunger to fill. That’s all there is to it.
