This classic Swiss cottage bread has a chewy crust and slightly sweet, malted barley flavor, with just a touch of sourdough rye.

In the Swiss canton of Valais, the mountain valleys are cold and dry and only hardy grains will grow.   Wheat flour must be imported from the lower valleys.  Long ago, the frugal peasants carefully blended prized wheat flour with their native rye's and barley's into chewy, hearty cottage breads.
 
This is a terrific medium cottage bread.  You’ll love the chewy crust and slightly sweet, malted barley flavor with just a hint of sourdough rye (and no caraway seeds).  It is made with eight hearty grains but without preservatives. The grains are finely chopped.  They bake soft and chewy, with a hardy and wholesome texture yet the bread is still soft and moist. This is a healthy choice.

Editor's note: We love this bread, both the texture and the taste.  It's a hearty bread but still moist and soft.  It has a very interesting crust, one that is chewy but not hard or thick.  It has a rich melding of flavors.  To me, the malted barley is the outstanding flavor but you can definitely taste both the rye and the sourdough.  Some testers picked the sourdough or rye over the malted barley.  One said that it was the pumpernickel that her Swiss grandmother made but it is definitely lighter than most pumpernickels.
 
We served this extensively to people in the store.  Some people said that they didn't like rye.  If we could get them to try it, they liked it.  (Without caraway seeds, it doesn't have the strong flavor they associate with rye bread.)  When we served this with other breads, this was usually the favorite.

If you make this bread in your bread machine, water temperature is critical.  Please use a thermometer to measure water at exactly 80 degrees.  A ten degree difference in water temperature can double the growth rate of the yeast.  These bread mixes are satisfaction guaranteed when you use a thermometer.

Ingredients: Enriched wheat flour (wheat flour, malted barley flour, niacin, iron, thiamin mononitrate, riboflavin, and folic acid), dark rye flour, rye bread mix (rye sourdough, wheat gluten, sugar, salt, barley malt flour, corn flour, ascorbic acid, enzymes), cereal grain mixture (red wheat, soft white wheat, barley oats, corn, millet, flax, hulled barley, and rye), sugar and yeast (yeast, monostearate).  This mix contains wheat and may contain traces of soy, dairy, eggs, peanuts, or tree nuts.

Started my bread machine and walked away. Finally looked again and saw that it was in little clumps. Realized I'd only added one cup water. Stopped machine, added water, started over again and to my surprise, the bread was still good - misshapen, but good. Hearty bread we enjoy toasted.
