A potato ricer creates a smooth, consistent texture for mashed potatoes and other fruits and vegetables. It's faster than a masher and makes consistent, fluffy potatoes. It's also great for preparing purees--puree peaches and leave the skins behind in the hopper, for canning--it makes great applesauce, and for baby food.
The difference between this potato ricer and the Deluxe Jumbo Potato Ricer is that the hopper is about 2/3's the size of the jumbo and the sidewalls are not perforated so it doesn't press potatoes quite as fast.
