Can I mix my pancake batter the night before?

The answer is “yes”—but your leavening might go flat before morning. So here is what you do:

    • If your recipe calls for buttermilk and baking soda, wait till morning to add the baking soda. When mixed, the acidic buttermilk and alkaline baking soda react and create the bubbles that make your pancakes light and fluffy. If you mix these pancakes the night before, they will be flat by morning. We recommend that you wait till morning to add the buttermilk and baking soda.
    • If your recipe calls for baking powder and it is double acting as most baking powders are, your batter will still rise in the morning since baking powder reacts with heat. It may not rise enough and you may want to add another teaspoon of baking powder.
