A magazine of baking techniques, tips, and recipes, from
The Prepared Pantry

Dear Baker,

We love the berries of spring, the fruits of summer, and the crisp frost-kissed apples of fall but this time of year, you’ll find nothing better than sweet, juicy citrus. In this issue, you’ll discover ways to enjoy oranges, lemons, grapefruits, and more.

Pick up your free citrus guide from pumelos to uglis to sweeties. And don’t miss these scrumptious citrus recipes and tips.

And just to top it off—pick up the greatest chocolate chips we’ve ever tasted.

If you missed our last publication with free kitchen tools, Dutch Crunch Bread, and more, get it here. Don’t miss the super deal on the cookie scooper, glass-base springform pans, and pannekoeken pans.

The World’s Best Chocolate Chips?

Maybe not but we are amazed! These chocolate chips are so much better than grocery store chips, even better than the premium chips that we have been buying.

What makes them better? They are made of pure, dark chocolate. They have more cocoa butter. They look different, more attractive. They certainly taste better--made by a candy maker and they taste like it.

We ordered a few cases of these fine imported chips for you to try. Don’t miss these really scrumptious chips. They are worth every penny.

A Quick Guide to Citrus Fruits

The Orange Family

The familiar oranges are the most popular of our citrus fruits. They are nutritional, versatile, and keep well. Popular varieties include Valencia, navel, temple, and blood oranges.

The navel orange is best as an eating orange since its sweet pulp tends to turn a little bitter when the juice is exposed to air. Valencia oranges are enjoyed for both eating and juicing. The blood orange is a hybrid with an orange and red rind and reddish flesh and some people think, a touch of raspberry-like flavor. The temple orange is a flavorful orange-tangerine hybrid.

Apricot Orange Biscuits or Scones

Your family will love these flavor-packed biscuits or scones. They are quick and easy to make.

There’s a fine line between biscuits and scones. This biscuits are based on a buttermilk biscuit recipe and are light and fluffy. The scones are glazed with an orange frosting.

Florida Baked Chicken

Sweet oranges and lemons topped with a bit of your favorite peach or apricot jam or jelly makes this chicken delightful.

This is a very easy dish to make.

Citrus Spinach Salad

Ah, a spinach salad with orange and grapefruit sections, sprinkled with nuts and coconut, and drizzled with a citrus vinaigrette-type dressing.

This salad can also be made with lettuce instead of spinach.

Mom’s Double-Crust Lemon Pie

As a kid, I remember a double-crust lemon pie. I loved lemon pie but wasn’t crazy about the meringue so this was my favorite pie. This pie brings back those fond memories. Try it and see if you don’t fall in love with this old-style lemon pie.

The secret of this pie is a buttery crust to complement the lemon custard. The recipe calls for all butter and no shortening in the crust.

Broiled Grapefruit with Caramel Topping

For a change of pace breakfast treat, sprinkle brown sugar on grapefruit halves and heat under the broiler until bubbly. Serve immediately.
