Chicken
and Pineapple Salad
This is a very simple
salad but a good one. If you like, you can add herbs such as tarragon
or basil. Instead of green onion, fresh chives work well.
Ingredients
1 chicken breast,
cooked and cut into 1/2-inch cubes
1 8-ounce can of pineapple chunks or tidbits, drained
1/2 cup grapes, halved
2 tablespoons of green onions, chopped finely
1/3 cup mayonnaise
salt and pepper to taste
paprika
Directions
Toss the chicken,
pineapple, grapes, and green onions with the mayonnaise. Salt and pepper
to taste. Sprinkle with paprika.
