Brazilian White Chocolate Chippers
We loved these cookies with a tropical touch. They’re made with big chunks of Brazil nuts, pieces of pineapple, and white chocolate chips. Of course, if you’re a dark chocolate fan, you can change out the chips.
Ingredients
1 3/4 cups all-purpose flour
1/2 cups quick oats
1/2 teaspoon baking soda
1 cup butter
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 teaspoon salt
1 large egg
1/2 tablespoon vanilla extract
1 cup white chocolate chips
1 cup coarsely chopped Brazil nuts
3/4 cup dried pineapple, diced
Directions
Preheat the oven to 375 degrees.
- In a medium bowl, mix the flour, oats, and baking soda.
- In another bowl, cream the butter with the brown sugar, granulated sugar, and salt. Add the egg and vanilla and beat until smooth.
- Add the dry ingredients to the creamed mixture and beat until combined. Fold in the chips, nuts, and pineapple pieces.
- Drop spoonfuls on a lightly greased baking sheet. Bake 10 to 12 minutes or until edges begin to brown. Cool on a wire rack.
