Apple, Walnut, and Blue Cheese Salad
Apples, walnuts, and cheese are a classic salad combination. In this case, the recipe calls for blue cheese but any pungent or blue-veined cheese will do. (We used gorgonzola.) The pungency of the cheese offsets the sweet apples perfectly and the nuts and celery adds crunch. This is a good salad.
For the dressing:
1/2 tablespoon red wine vinegar
1/4 cup cream or half and half
1 tablespoon olive oil
1/3 cup blue cheese, crumbled (or other blue-veined cheese)
freshly ground pepper to taste
For the salad:
4 apples, cored and diced
2 celery stalks, sliced
1 tablespoon lemon juice
3 tablespoons raisins or cranberries
1/2 cup walnuts pieces
2/3 cup Blue cheese, crumbled
- Make the dressing and set aside in the refrigerator to chill: Mix the vinegar, oil, and cream together in small bowl. Add the 1/3 cup Blue cheese and press the cheese with the back of a spoon to make a slightly lumpy Blue cheese dressing.
- In a large bowl, mix the apple pieces, celery, and lemon juice. Add the walnut pieces and raisins or cranberries and stir.
To serve, scoop the fruit salad onto beds of greens and sprinkle the remaining blue cheese over the salad. Serve with the Blue cheese dressing.
